Bone Suckin' Pork Chops

month's recipe comes from the kitchen of Tricia Grindel,

This
recipe is really called “Lime Pork Chops,” but
once you taste them, you’ll understand how
they earned their nickname. A good friend (a native
Southerner) made these for me years ago, and when
I tasted them I truly thought I “dun died an
gaun ta heaven!” These are the best pork chops
you’ll ever eat and once the meat’s gone,
you’ll be picking up what’s left and
suckin’ the bones!

Suckin’ Pork Chops 4-6 pork chops
1 Tbsp. salad oil
¾
C. chicken broth
2 Tbsp. brown sugar
3 Tbsp. lime juice
2 tsp. Dijon mustard ¼ C. water
2 tsp. Corn starch
2 Tbsp. butter or margarine
Brown pork chops in oil. Add broth, brown sugar,
2 Tbsp. of lime juice, and mustard. Cover and simmer
for 20 minutes. Transfer to serving platter. Dissolve
corn starch in cold water and add to skillet. Bring
to boil for 1 minute. Remove from heat. Stir in remaining
lime juice and butter. Pour over pork chops. Serve
with rice.
